Sugiura explained that many of the dishes were inspired by global flavors while retaining the essence of California.

"This year the concept is contemporary global taste with California flair. Okay, so first appetizer is, this is contemporary Mediterranean dish. A second course, as the main course, which is ocean trout, lightly smoked and sautéed and served with sautéed spinach with sweet corn," Sugiura said.

The dinner will end with a mango-flavored cake especially created for the event by Executive Pastry Chef, Thomas Henzi.
